Kiridashi
This may be an obvious question, but for those who make them what kind of edge bevel is proper? I know the grind is a single sided chisel grind, but what about the edge bevel? I know there are plenty of examples, but I've seen it done a couple different ways.

I don't make them but if it's 'proper' you want I would think a zero edge bevel would be traditional. In other words, a true chisel edge with no secondary...

Ray is right. I have read up on older traditional edged weapons. All the traditional kiridashi's were a zero edge bevel. There wasn't a secondary bevel on them. But it is harder for a customer to sharpen a zero edge so you may want to give it a secondary bevel so they don't mess up the knifes finish.

Are you guys saying that a Kiridashi has a type of "scandi" grind?

In a sense, Eric but not exactly. Scandi knives are ground from both sides until an edge is formed. A kiridashi is ground from only one side until an edge is formed - a true chisel grind. And, of course, the blade shapes are entirely different...

That's what I was thinking was traditional, but I had seen them with the grind on one side but an edge bevel on both. Thanks for the input. Maybe I'll try both and use them to see what works best.

Most owner/users wind up with a edge bevel the first time they try to sharpen one. So, probably won't matter much. Sharpening a true chisel grind is very hard for most folks.

It might also be interesting to grind both sides of that blade shape into a scandi type grind. A "scandidashi."

I think the Japanese have a different term/name for that type of knife and grind, but that sounds pretty good to me.
