Okay time for some trouble shooting
I keep running into the same problem and have ruined 3 knives already.
I'm trying to do a convex grind on the blade that goes 3/4". So far I've made it about 1/4" - 1/2" up before it turns into a flat grind. The ricasso isn't forming and it seems to be wider at the tip.
When I do my grind I keep my elbows tucked and move my body with my strokes across the belt. I've tried doing it with the edge facing up and facing down. I seem to get better results with the edge facing down though.
At this point I"m contemplating switching to files to do this part since I'll have more control. My only concern with that is the amount of time it will take.

Don't give up. The 3 you say are ruined can probably be salvaged. They'll just be a little smaller and shaped differently. I recommend edge up when grinding, that way you can see the line you've scribed down the center. Have you watched any videos on grinding?

I have, and I think I've realized what part of the problem is. The backing behind the belt is actually wider by half an inch on each side. In all the videos I've seen the belt is the same size as the backing.
The more I think about it though the more I'm leaning to the file technique. It'll be more time consuming and labor intensive for sure, but the end result will offer a lot more precision.
As far as the ruined blades go, Those are in a scrap pile for now. Not quite sure what I'll use them for as of yet, but I know if I keep trying to fix the mistakes right now they'll be ground down to nothing before I know it.

They may end up ground to nothing, but still lets you practice the grinding or file work without using up more of your steel
